This coffee comes from a small 3.5 hectare farmed owned by Wilson Vaquiro. He grows a mixture of varietals and focuses on careful washed processing. All coffee is hand harvested carefully to select only ripe cherry.
After harvesting the coffee is left to rest 16 hours in sacks in a cool dark room. The coffee is then pulped to remove most of the fruit and then dry fermented for 24 hours. This long, dry fermentation has worked very well and has resulted in coffee with amazing clarity with bright, juciy flavours of tangerine, redcurrant and sweet lemon. After fermentation the coffee is washed and dried on raised beds.
